With many grocery store items still scarce, such as flour, sugar, meats, and produce, this dessert features ingredients that are easy to source, so you can still serve something delicious for the whole family without having to scour the store for hard-to-find items.

I also love this recipe because you can just dump it all into a bowl and chill and serve it that way, or go the “fanciful” route and portion out little cups! I went the cup route because the kids enjoy the single servings, and in a quarantine environment, sharing dishes is less optimal.

So How Do I Make This Recipe?

All you need is to grab is a blender, toss the ingredients inside and whiz it up!

Since there is gelatin involved, you do need one cup of boiling water, but that’s all the prep that’s necessary.

I love breaking out my electric kettle to boil water because it’s ready in about two minutes and doesn’t require me turning on the stove!

Peach Jello Salad Recipe

Ingredients

  • 8 oz water
  • 3 oz peach gelatin
  • 1 15 oz can Libby's® Canned Peaches Slices or Halves
  • 8 oz cream cheese

Instructions

  • Boil water and stir in gelatin until it dissolves. Add mixture to a blender along with peaches, the juice from the can, and the cream cheese. Blend until smooth. Pour mixture into a large serving bowl or individual serving cups, cover, and refrigerate for 4 hours, or until set. Enjoy cold!

Notes

*If you can't find peach gelatin, feel free to swap it with a different variety such as strawberry!
*You can use fruit juice or heavy syrup varieties, with the fruit juice variety resulting in a fluffier salad and the heavy syrup variety resulting in a denser salad.
