Peppermint Macarons | asmiplepantry.com I love to share. I swear there are days I don’t eat because I am always giving food away to anyone and everyone. I don’t really need to eat, anyway. Kidding! But since we’re in the countdown to Christmas, I am really pushing up my gift-giving sleeves and pumping out some primo goodies, like these Peppermint Macarons, to share with friends, family, and everyone in between!

Peppermint Macarons | asmiplepantry.com Peppermint Macarons | asmiplepantry.com Macarons have always been one of my specialties, but I haven’t made them since my oven was replaced, so this seemed like the perfect time to see how well it would perform under the pressure of the touchiness that is a macaron. Ha.

I had everything ready to go, because I have a long list of people deserving of some holiday cheer, including, but not limited to, Ange, Jamie, Paige, my amazing FedEx guy, and my girls’ teachers!

They have fun, festive colors for the holidays, but I went with red to complement my red, peppermint macarons. I love how the Quik Clik Seal® keeps my delicate cookies safe and secure, so I can send them off without worrying about the lids coming off and my little pretties being destroyed. And since they are microwave, dishwasher, and freezer safe, my recipients can enjoy them even after they’ve devoured their treats!

Peppermint Macarons | asmiplepantry.com I whipped up some adorable printables that you can stick on your Rubbermaid TakeAlongs to personalize them and make them super fun and giftable! I ran some plain sticker paper through my printer and cut out the pieces and slapped them on. Works perfectly! I added my peppermint macarons to some square and deep rectangle containers, then I tied them up in some cute baker’s twine and will be sending them on their merry way to all my dear people out there!

Peppermint Macarons

Ingredients

  • 30 grams White Granulated Sugar
  • 120 grams Egg Whites, room temperate
  • 125 grams Almond Meal
  • 210 grams Powdered Sugar
  • 1/2 tsp Peppermint Extract
  • Red Gel Food Coloring
  • 1 Candy Cane, crushed
  • 1 1/2 C White Buttercream Frosting

Instructions

  1. Place the almonds and powdered sugar in a food processor and run for several minutes, occasionally stopping to scrape the sides. Sift the mixture into a large bowl and discard any pieces that don't pass through the sieve, then set aside.
  2. In a large mixing bowl, gently whisk together the granulated sugar and egg whites until combined. Turn the mixer up to medium-high and continue to whisk together the eggs and sugar until stiff peaks form. Add the peppermint extract and food coloring and continue to beat at high speed for an additional minute or two.
  3. Sift about 1/3 of the almond meal/powdered sugar mixture into the bowl. Slowly and carefully fold into the egg whites, by scraping the sides to the bottom of the bowl and then back over the top until the sugar flour is incorporated. Repeat until the all the sugar flour is mixed in, being careful to not beat the egg mixture.
  4. Carefully spoon into a pastry bag prepped with a 1 inch round tip and pipe 1 1/2 inch circles onto baking sheets covered with parchment paper. Tap the baking sheets against a flat surface to release any trapped air bubbles. Sprinkle with the crushed candy canes. Allow to sit for 20-60 minutes, or until the batter loses its shine and is no longer tacky to the touch.
  5. Bake in a 300 degree oven for 13 minutes, or until the bottoms are just starting to brown and the cookies are firm on their feet. Allow to cool completely before removing from parchment paper.
  6. Sandwich cookies with buttercream and enjoy!
